Basic Good Manufacturing Practices Checklist

This checklist provides a general starting point for assessing your facility's compliance with Good Manufacturing Practices. It does not replace an on-site assessment, but it can help identify evident gaps before a more detailed review.
Infrastructure and environment
- Food-contact surfaces are made of washable materials and are in good condition.
- Clean and dirty process areas are adequately separated.
- Ventilation prevents condensation above processing lines.
- A current pest control program is in place and supported by records.
Personnel hygiene
- Staff are trained in hygienic food handling.
- Handwashing stations are accessible in processing areas.
- Appropriate work clothing is used and controlled (hairnets, aprons, footwear, among others).
Process and documentation
- Written procedures are available for critical process operations.
- Temperature monitoring records are maintained where applicable.
- Traceability is maintained from raw materials through finished product.
- Expiration dates and stock rotation are controlled for raw materials and other inputs.
Waste management and sanitation
- Documented cleaning and disinfection procedures are in place (Sanitation Standard Operating Procedures, or SSOPs).
- Waste is removed and stored without contaminating processing areas.
